In fact, the taste is coveted worldwide to the point that consumers are willing to pay as much as $200 per pound for this foreign brew.
The big question: what makes this java irresistibly delicious?
The answer: poop.
Yes, you read correctly. Defecation is the key ingredient!
Kopi Luwak is a bizarre delicacy that is made from coffee beans found in the droppings of the Indonesian civet cat. During the digestion process, the civet cat emits enzymes. It’s believed the digestive oversight and gastric juices are responsible for the unique flavor and aroma.
If you’re not grossed out yet, let’s discuss how the droppings go from beans to brew.
- The Indonesian civet cat feeds on the ripest coffee cherries found on coffee plantations.
- Because the animal cannot digest the seed of the fruit, they deposit the coffee beans. It takes about 24 hours to fully digest in their stomachs before they are excreted.
- The beans are collected from the animal’s feces and processed into coffee. Hence the nickname, cat poop coffee.
- The coffee beans are washed, dried with warm air, pounded, and sorted.
- The coffee beans are placed in a pan and roasted over a fire.
- Once roasting is completed, beans are grounded up coarsely. It’s then sifted out for impurities and grounded again.
- The final product is packaged and ready for consumption.
